    The snug new site at 74 Reservoir Street has just eight indoor seats (plus another 12 outside) and is designed by Varvara Sellies from Sisu Interiors. Shafran has installed a red neon sign and some of fanciest tiling you’ll see in a cafe and bagel bar. It’s in a food-lovers’ part of Surry Hills, with Single Origin on the strip and Firedoor around the corner.

    He enlisted Varvara Sellies of Sisu Interiors to cover the walls in white, octagonal, textured tiling, that is coated in a golden sheen, and the floor in a stunning white, red, and grey mosaic. Complementing these are faux-marble countertops, sage banquettes and splashes of fire-truck red, including the super-shiny coffee machine. A New York-inspired mix, ranging from crooners like Frank Sinatra to salsa and ’90s hip-hop, provides the soundtrack.
